Recipe for Amaze-balls Chocolate Almond Energy Balls.

I have three kids. They each eat three square meals a day, and snack one to one hundred times in between those meals. I, on the other hand, scarf down a bowl of granola and rejected, bruised fruit while making their breakfast and over-seeing their lunch-making disasters; I then eat a peaceful dinner 12 hours later while they are all finally asleep. During those crazed hours that span breakfast to dinner, I often pick at leftovers from the fridge and grab what I can while I’m running from point A to point B.

Enter what I like to call my Amaze-balls Chocolate Almond Energy Balls.

They are the perfect on-the-go snack, and can keep up to a month in the freezer (although they never last that long if my husband knows they’re there). They are jam-packed with protein, fibre and good-for-you fats (who doesn’t love those!?)

Make sure to grab some raw cacao powder for this recipe to up the health-y-ness of these giffer gaffers…while “dutch-processed” cocoa powder will also work in a pinch, you won’t get the full antioxidant benefits of the superfood that is CACAO.

Amaze-balls Chocolate Almond Energy Balls

These Energy Balls are healthy, hearty, and the perfect on-the-go snack! So grab your food processor and…Let’s Get Baking!

Ingredients

  • 1 cup (150 grams) raw almonds
  • 1/2 cup (55 grams) spelt flakes (or other flaked oat)
  • 1/2 cup (80 grams) Medjool dates, pitted
  • 3 tablespoons natural almond butter
  • 2 tablespoons raw cacao powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Soak dates in hot water while preparing other ingredients. Drain before using.
  2. Place almonds and spelt flakes in a food processor and process into a fine meal (30 to 60 seconds).
  3. Add dates to food processor and process until finely chopped (30 to 60 seconds).
  4. Add cacao powder and pulse to combine.
  5. Add almond butter and salt, and pulse until dough sticks together when pinched. Add up to 1 tablespoon of water, if needed.
  6. Scoop out rounded tablespoons and form into a ball.
  7. Freeze for 30 minutes before devouring.

Notes

  • Make sure you're using runny, natural almond butter. The no sugar, no salt added kind. Depending on the brand of almond butter you're using, you may need to add up to a tablespoon of water before forming the balls.
  • If you are opting for another type of oat, keep in mind that different oats have different weights. If opting for another flaked oat, use a measuring cup instead of a scale. 
  • Wet your hands when shaping into balls to avoid a sticky situation.
  • Store in an air-tight container in the fridge for up to a week or in the freezer for up to a month. But I can promise they won't last that long...
